    mqtt_protocol.h: rename header guard to avoid collision with libmosquitto

    Mosquitto installs its own mqtt_protocol.h system-wide using the same MQTT_PROTOCOL_H guard. When USE_MOSQUITTO is enabled, mqtt.h pulls in
    the system header first via <mqtt_protocol.h>, blocking our local file
    from being included by mqtt_client.h / mqtt_broker.h / mqtt_topic.h.
